This is a brand new release by Highland Park. This Single Malt is 17 years old and bottled at a cask strength of 53.9% abv. This Highland Park Ice is part of a series and in 2017 they will release the "Fire" edition. This is matured in ex-Bourbon casks.Nose: Singed straw, burnt milk, coconut creme brulee, baked banana, bonfire of gorse and heather, smoked almonds, mango & chilli salsa, pineapple singed on a bbq, anise.Palate: Sooty sugared almonds, vanilla pods in coconut milk, spiced white chocolate, burnt straw, pineapple and mango salsa, battenberg cake with apricot glaze, white pepper and subtle smoke.Finish: Coconut, toasted vanilla, floral/heather notes, sugared almonds, peppery spiced oak, white chocolate, toasted marsmallows, sooty smoke over pineapple.First fill Ex-Bourbon casks to the fore here but with the trademark Highland park smoke & heather notes showing well too, elegant and some long lasting spice on the finish of this limited release that will melt the ice in your veins on a cold night.Highland Park FIRE Edition is a Limited edition release 15 year old single malt which has been matured in 100% refill Port casks which is a first for Highland Park.Nose: Earthy cranberry, smoked rose turkish delight, red liquorice, cherry jam, some leathery notes, ripe dark plums, dark chocolate on the forest floor.Palate: Fat and juicy red fruit (think damsons and plums) aromatic smoke (cinnamon bark on a bonfire) white pepper, red liquorice, new leather, crunchy tannins, redcurrant jelly on smoked duck salami, dry rose wine or tawny port nuances.Finish: Crunchy red berries, white pepper, sweet smoked meat, red liquorice, smoked fry's turkish delight bars, ripe plums and cinnamon compote. Spiced strawberry jam.A very elegant Highland Park and no i am not just talking about the Lord of the rings style packaging! A sort of deconstructed michelin star restaurant of a Highland Park and well worth paying the extra for.15.9/20 Whisky Magazine (July 2017)
